Low carb tomato salad can be quite a challenge, but it’s not that hard to make.
You’ll need: A bowl of tomatoes (a bit of tomato puree works well too) A salad dressing (like a cucumber or cucumber salad dressing) Vegetables (I use baby spinach, kale, collard greens, collards and rutabaga) Tomato paste (or any other tomato paste you prefer) Tofu (or veggie stock) Black pepper Mushrooms (or other mushrooms) Cucumber juice (I like to use blueberries) Greens or berries (optional) Salt and pepper to taste To make your tomato salad, start with a bowl of diced tomatoes.
Add in a little of the salad dressing and some vegetable stock, and mix everything together.
This will make a delicious tomato salad that will keep well in the fridge for up to a week.

However, you should avoid using dried tomatoes, as they will cause the salad to turn rancid.
I like using baby bok choy, spinach or kale.
Tomatos and cucumbers are versatile, so this salad will suit everyone, even those who are vegans.
