The marinated green beans are one of the easiest vegetables to marinate and they can also be served over rice or in a salad with a dollop of dressing.
A marinated tomato and some fresh herbs make a great addition to this vegetarian dish.
Here’s how to make it at home.
Marinated Green Beans Recipe Ingredients 1 green onion, sliced thin 1 tomato, sliced thickly 1 clove garlic, minced 1 tbsp lemon juice 2 tbsp tomato paste 1/2 tsp salt 1/4 tsp pepper 1 cup cooked or frozen baby spinach, thawed 1 cup frozen green beans, thawed and drained 1 cup fresh basil leaves, cut into small pieces 1 tbsp olive oil Directions Wash the green beans well with warm water and pat dry with paper towels.
Place the green onions, tomato and garlic in a large saucepan and add the lemon juice and tomato paste.
Saute over medium heat until the onions and tomatoes have softened.
Add the spinach, and saute for 2 minutes, stirring occasionally.
Add basil leaves and cook for another minute.
Remove from heat and allow to cool.
Add in the cooked baby spinach and stir through.
Cover and marinate for 30 minutes.
(If you don’t have fresh spinach, cut it into pieces and then thaw in the fridge for a few minutes.)
Cut the spinach into thin strips and toss into a bowl.
Season with salt and pepper and top with basil leaves.
Serve over rice, or in salad with fresh basil.
