A simple quiche that is made with garlic, tomatoes, and vegetables.
Ingredients: 1 pound onions, sliced 2 garlic cloves, minced 2 large carrots, peeled and sliced 1 cup water 1/2 cup tomato soup 2 tablespoons oil 3 tablespoons fresh chopped garlic 1/4 cup vegetable stock (optional) Directions: Preheat oven to 425 degrees F. Place the onions in a bowl and add the garlic.
Saute for 3 minutes on each side or until translucent.
Add the carrots and water.
Stir to combine.
Add oil and tomato and stir to combine, about 30 seconds.
Add garlic and stir until fragrant.
Season with salt and pepper and mix well.
In a large skillet, add water and heat to medium-high heat.
Add onions and cook, stirring, until translucent, about 3 minutes.
Add carrots and simmer until tender, about 15 minutes.
Season and add stock if necessary.
Pour over quiche and sprinkle with salt.
Bake in the oven for 15 minutes or until golden brown and the bottom is cooked through.
Serve with bread and some toasted sesame seeds for dipping.
